Turmeric is a spice that's been long known for its anti-inflammatory properties. It has shown promise in treating many different health conditions from cancer to Alzheimer's disease. Turmeric is frequently used in Asian cuisine and comes from the ginger family. It adds instant flavor to various dishes including chicken. While there are several ways to prepare chicken using turmeric, this roasted turmeric chicken recipe is easy to prepare and an excellent, low-fat way to enjoy the flavor and health benefits of the spice. Things You'll Need • 1/2 cup of extra virgin olive oil • 3 tbsp. turmeric • One 5-lb. roasting chicken • Sea salt • Freshly ground black pepper • 1 bunch fresh thyme leaves • 1 bunch fresh sage leaves only • 4 tbsp. butter • 1 cup chicken broth • Roasting pan • Cutting board • Mixing bowl • Carving knife • Brush • Slotted spoon Preheat oven to 350 degrees Fahrenheit. Combine olive oil and turmeric in a small bowl. Brush the entire chicken with the paste and place in a roasting pan. Sprinkle with sea salt, pepper, thyme and sage. Dot with 2 tbsp. of butter. Roast chicken for about one hour and 20 minutes. When it's ready, the skin should be golden and crispy. To make gravy out of the pan drippings, remove the chicken and herbs from the pan and place on a cutting board. Keep about 1 tbsp. of the fat and then pour out the rest. Heat the pan on the stove on high. Add the chicken broth and scrape the browned bits from the bottom of the pan. Boil until the liquid is reduced by half. Turn off the heat. Add the remaining butter and stir until smooth. Carve the chicken. Serve with 1 or 2 tbsp. of gravy and a sprinkle of herbs.
